Mix 1/2 cup warm water, pinch of sugar and yeast in a bowl. Stir and let it sit for 5-10 min until froth appears on top.
Combine the flour &salt in a mixing bowl. Add yeast water gradually and knead into soft dough. Drizzle little oil and roll the dough into a ball. Cover the bowl with cling wrap or a wet cloth and let it sit for 35-40 minutes until the dough has risen to almost double.
Preheat the oven at 180 C.
Knock the air out of the dough and roll it out thinly on a flour dusted surface. Sprinkle Sesame on top and roll it out once more. Cut into thin long triangles and prick with fork all over. Lay them out on a baking sheet and bake for 15-20 min or until crisp.
